One-Pan Beef & Broccoli with Bell Peppers

Tender strips of beef, crisp broccoli, and colorful bell peppers come together in this easy one-pan meal. Packed with iron-rich beef and vitamin C from the bell peppers, this flavorful dish is a simple and delicious way to support your iron intake—perfect for a quick weeknight dinner.

Ingredients

  • 1 lb lean beef sirloin, thinly sliced
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh lime juice
  • ½ teaspoon black pepper
  • 2 green onions, sliced, for garnish
  • 1 teaspoon sesame seeds, optional

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced beef and cook for 3–4 minutes, stirring occasionally, until browned. Remove the beef from the skillet and set aside.
  2. Add the remaining tablespoon of olive oil to the same skillet. Add the broccoli and bell peppers and cook for 4–5 minutes, until slightly tender but still crisp.
  3. Add the garlic and ginger and cook for about 30 seconds, stirring constantly.
  4. In a small bowl, mix the soy sauce, honey, sesame oil, lime juice, and black pepper.
  5. Return the beef to the skillet. Pour the sauce over the beef and vegetables and toss everything together.
  6. Cook for another 2–3 minutes, until the beef is cooked through and everything is coated in the sauce.
  7. Remove from heat and garnish with sliced green onions and sesame seeds, if desired. Serve warm.
