Ingredients
- 1½ lbs beef chuck, cut into bite-size cubes
- 1 tablespoon olive oil
- 1 large yellow onion, finely chopped
- 4 garlic cloves, minced
- 1 tablespoon freshly grated ginger
- 1½ tablespoons berbere seasoning, or to taste
- 1 teaspoon ground cumin
- ½ teaspoon ground turmeric
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon tomato paste
- 1 can (14.5 oz) diced tomatoes
- ¾ cup dried red lentils, rinsed well
- 4 cups low-sodium beef broth
- 3 cups chopped collard greens, tough stems removed
- 1 tablespoon fresh lemon juice
- ¼ cup chopped fresh cilantro or parsley
- Lemon wedges, for serving
- Optional: injera or whole-grain flatbread, for serving
Instructions
- Brown the beef: Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the beef in batches and brown well on all sides. Transfer to a plate and set aside.
- Build the flavor base: Reduce the heat to medium. Add the onion and cook for 6–8 minutes, stirring occasionally, until soft and golden. Add the garlic and ginger and cook for another minute.
- Add the spices: Stir in the berbere seasoning, cumin, turmeric, smoked paprika, salt, black pepper, and tomato paste. Cook for about 1 minute, stirring constantly, until deeply fragrant.
- Simmer the beef: Return the browned beef to the pot. Add the diced tomatoes and beef broth and stir well. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 45 minutes.
- Add the lentils: Stir in the rinsed red lentils. Continue simmering uncovered for 20–25 minutes, stirring occasionally, until the lentils are tender and the beef is fork-tender. Add a little extra broth or water if the stew becomes too thick.
- Add the collard greens: Stir in the chopped collard greens and simmer for another 8–10 minutes, until tender.
- Finish the stew: Stir in the fresh lemon juice. Taste and adjust the salt or berbere seasoning as desired.
- Serve: Spoon the stew into bowls, sprinkle with fresh cilantro or parsley, and serve with lemon wedges and injera or whole-grain flatbread, if desired. 🇪🇹🌿❤️
Iron Tip
Beef provides heme iron, which the body absorbs efficiently, while red lentils and collard greens contribute plant-based non-heme iron. Tomatoes and fresh lemon juice provide vitamin C, which helps improve the absorption of iron from plant foods. Finish each bowl with a generous squeeze of lemon for bright flavor and an iron-friendly boost. 🥩🌿🍅🍋
Why This Recipe Works
This hearty stew layers tender beef, creamy red lentils, and earthy collard greens with the warmth of berbere-inspired spices, garlic, ginger, and tomato. Slow simmering allows the flavors to deepen while the lentils naturally thicken the broth, creating a rich, satisfying meal that feels comforting, nourishing, and full of character. 🇪🇹🥩🌿✨
Serving Suggestions
Serve this Ethiopian-inspired stew warm with injera for scooping up every bit of the rich, spiced sauce. If injera isn’t available, whole-grain flatbread or brown rice also works beautifully. Add fresh lemon wedges at the table and finish each bowl with chopped cilantro or parsley for a bright, fresh contrast to the deeply savory stew. 🇪🇹🍋
Storage and Reheating
Store leftover stew in an airtight container in the refrigerator for up to 3–4 days. Reheat gently on the stovetop over medium-low heat, stirring occasionally and adding a splash of beef broth or water if the stew has thickened. Individual portions can also be microwaved until steaming hot. Finish reheated servings with fresh herbs and a squeeze of lemon to brighten the flavors. 🍋🌿
Nutrition Notes
This hearty stew brings together three iron-rich ingredients: beef, red lentils, and collard greens. Beef provides highly absorbable heme iron along with protein and vitamin B12, while lentils contribute plant-based protein, fiber, and non-heme iron. Collard greens add additional nutrients, and the tomatoes and fresh lemon provide vitamin C to support the absorption of plant-based iron. 🥩🌿🍅🍋
