Ingredients

  • 1½ lbs lean beef stew meat, cut into bite-size pieces
  • 1 cup dry brown or green lentils, rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium beef broth
  • 2 cups fresh baby spinach
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground turmeric
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • Juice of ½ lemon
  • ¼ cup chopped fresh parsley or cilantro
  • Lemon wedges, for serving

Instructions

  1. Brown the beef: Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add the beef in batches and brown for about 2–3 minutes per side. Transfer the browned beef to a plate.
  2. Cook the aromatics: Reduce the heat to medium. Add the onion and carrots and cook for 4–5 minutes, until they begin to soften. Add the garlic and cook for another 30 seconds.
  3. Bloom the spices: Add the cumin, coriander, smoked paprika, turmeric and cinnamon. Stir for about 30 seconds, just until fragrant.
  4. Build the stew: Return the beef to the pot. Add the diced tomatoes, rinsed lentils and beef broth. Stir everything together and bring to a gentle boil.
  5. Simmer: Reduce the heat to low, cover partially and simmer gently for about 45–60 minutes, stirring occasionally, until the beef and lentils are tender. Add a splash of broth or water if the stew becomes thicker than you prefer.
  6. Add the spinach: Stir in the fresh spinach during the final 3–5 minutes of cooking and allow it to wilt into the stew.
  7. Brighten the flavors: Remove the pot from the heat. Stir in the fresh lemon juice and most of the chopped parsley or cilantro. Taste and adjust the salt and black pepper as needed.
  8. Serve: Ladle the stew into bowls and finish with the remaining fresh herbs and a lemon wedge on the side. Serve warm and enjoy. 🍋🌿

Iron Tip

This hearty stew brings together both heme and non-heme iron in one bowl. Beef provides heme iron, which the body absorbs more readily, while lentils and spinach contribute plant-based non-heme iron. Tomatoes and fresh lemon add vitamin C, which helps your body absorb non-heme iron more effectively—making this a flavorful and thoughtfully paired iron-rich meal.

Why you’ll Love This Recipe

  • Iron-rich combination: Beef provides heme iron, while lentils and spinach contribute plant-based iron.
  • Warm, aromatic flavor: Cumin, coriander, turmeric, paprika and a touch of cinnamon create a wonderfully fragrant, Moroccan-inspired spice blend.
  • Hearty and satisfying: Tender beef and lentils make this a substantial meal that can stand beautifully on its own.
  • One-pot comfort: Most of the cooking happens in a single pot, which means plenty of flavor without a mountain of dishes.
  • Even better the next day: As the stew rests, those warm spices continue to mingle, making leftovers especially delicious.

Serving Suggestions

Serve this stew piping hot with a generous sprinkle of fresh parsley or cilantro and a lemon wedge for squeezing over the top. Enjoy it on its own, or pair it with warm whole-grain flatbread, a simple cucumber and tomato salad, or a small serving of whole-grain couscous to soak up the richly spiced broth.

Storage & Reheating

Allow the stew to cool before transferring it to an airtight container. Store in the refrigerator for up to 3–4 days. Reheat gently on the stovetop over medium-low heat, stirring occasionally and adding a splash of broth or water if the stew has thickened. Individual portions can also be reheated in the microwave until piping hot. Finish with fresh herbs and a squeeze of lemon before serving to bring those bright flavors back to life.
